Ugh, lately I have been obsessed with Poke! I understand that traditional Poke uses Tuna but I can't help but use Salmon (my favorite fish). Thought I would play around with flavors I like and it turned out so well! And figured I would finish the meal off with some simple Udon soup - simply delicious!

Salmon Poke
1 pound of sushi grade salmon
2 Tablespoons of soy sauce
2 Tablespoons of lemon juice
1 Teaspoon of sesame oil
1 Tablespoon of chopped green onion
1) Cut salmon into 1/2" cubes
2) Combine soy, lemon, and sesame oil with salmon in a bowl
3) Top off with green onion
I personally love to pair it with a side of seasweed salad and sushi rice :)
Udon Soup
1 package of udon noodles
2-3 cups of chicken broth
Half a package of Lobster/Fish balls
1 cup of Bok Choy
1 package of enoki mushroom
Thinly sliced beef (I usually buy precut frozen cuts at the asian supermarket)
1) Boil the chicken broth is a large pot.
2) Once it starts boiling, Reduce the heat to medium.
*I add all my ingredients except for the and beef slices bok choy. I like to add this last minute to add a bit of crunch to my soup and I like my beef medium rare.
3) Once the lobster/fish balls start floating and the enoki mushrooms are well cooked through add the beef.
And there you have it! And of course you can adjust your dish to your tastebuds! Enjoy :)
